In the case of sparkling wine, such as Champagne or Asti Spumante, a smaller mouthed stem is used to keep the wine sparkling longer in the glass. Keep in mind that perfectly smooth champagne glasses don’t create the streams of bubbles. Many glasses now have small etched “imperfections” that create the bubbling effect in the glass. If there are no “imperfections” in the glass, you won’t get bubbles. It’s as simple as that.
